‘Foolproof’ recipe that guarantees ‘perfect pancakes every time’

Kickstart the day with some yummy pancakes this weekend. BBC Good Food’s recipe is very straightforward with minimal prep time and ingredients.

Going out for breakfast is a lovely weekend luxury but making it at home can be fun for the whole family.

This recipe is a great one for when the kids or grandkids are round, as children can get involved in making this super simple concoction.

BBC Good Food’s easy pancake recipe takes just 10 minutes to prepare and 20 minutes to cook plus optional standing, so you won’t be in the kitchen all day.

The recipe also contains just four main ingredients, so budding chefs won’t be forced to traipse round the supermarket for hours finding them.

It makes 12 pancakes so is the perfect breakfast for those hosting this weekend, however quantities can be amended depending on party size.

Pancakes aren’t exclusively a breakfast food and can be enjoyed as dessert too. Add melted chocolate or chocolate sauce, or confectionary such as marshallows for the ultimate decadent treat.

100g plain flour

Two large eggs

300ml milk

One tbsp sunflower or vegetable oil, plus a little extra for frying

Lemon wedges to serve (optional)

Caster sugar to serve (optional)


1. Place the plain flour, eggs, milk, one tbsp sunflower or vegetable oil and a pinch of salt in a bowl or large jug. Whisk the ingredients together into a smooth batter.

2. If you have time, set this aside for 30 mins to rest. If you’re in a rush you can start cooking straight away.

3. Place a medium frying pan or crêpe pan over a medium heat and carefully wipe it with oiled kitchen paper.

4. When it’s hot, cook the pancakes for just one minute on each side until golden. Keep each finished pancake warm in a low oven as you make the rest.

5. Experiment with toppings. BBC Good Food recommends serving these pancakes with lemon wedges and caster sugar, or your favourite filling. Enjoy!

For leftover pancakes, layer them between baking parchment, then wrap in cling film and freeze for up to two months.
