Jamie Oliver’s pumpkin and ginger soup is an easy recipe to follow and perfect for boosting your immunity against circulating colds and flu.

Pumpkin and ginger soup recipe
Cooks in: one hour
Ingredients:
- One kg pumpkin
- Two shallots
- 75g ginger
- Fresh herbs, such as chives and mint
- Extra virgin olive oil
- One litre organic vegetable stock
- 125ml coconut milk, plus extra to serve
- Half tbsp chilli powder
- One lime
- Salt
- Pepper
Method
1. Deseed and roughly chop the pumpkin, peel and chop the shallots, then peel and finely grate the ginger. Pick and finely chop the herbs.
2. Place the pumpkin, shallots, ginger and some oil in a large saucepan and sauté until soft.
What does sauté mean?
Sauté means to cook food in oil or fat over heat, so basically for this recipe, it means to fry the ingredients until they become a bit soft.

3. Add the stock, coconut milk and chilli powder. Season, then bring to the boil and simmer for 40 minutes.

4. Blitz in a food processor then serve with the fresh herbs, lime juice and a splash of coconut milk.
