Chef shares ‘specialty’ chilli recipe with unique ingredient

Chilli is traditionally made with minced beef and beans and flavoured with chilli peppers or chilli powder.

The warming dish is a dinnertime favourite in British households and is one that many people have developed their own recipes for.

But one chef has claimed that his “award-winning” formula is the only way to cook it, and it contains one “secret ingredient”.

Sharing a video on his TikTok profile, chef Jaffry K. Ward (@jaffryk.ward) said: “Here’s how you make my famous award-winning chilli…I’m gonna give you guys my secret ingredient that takes the chilli over the top.”

Fellow TikTok users who followed his recipe claimed it was “so good”, “delicious”, and a hit with their families.

Ingredients

  • One jar/215g of sliced green jalapenos (available in Sainsbury’s)
  • Four tablespoons of tomato puree
  • One can of chopped tomatoes
  • One green pepper, diced
  • One white onion, diced
  • 1kg lean minced beef
  • One tablespoon of ground cumin, garlic powder, onion powder, ground mustard and paprika
  • Three tablespoons of chilli powder
  • One teaspoon of Proper Spicy Seasoning – or an alternative
  • Worcestershire sauce
  • One beef stock cube dissolved
  • One tin of kidney beans

Method

Start by sauteeing the onion and chopped pepper in a large frying pan with a dash of cooking oil. Add in the minced beef and cook until lightly browned. Throw in the jalapenos and cook for a further three minutes before sprinkling in the wide range of seasonings into a small bowl.

According to the chef, this is where his secret ingredient comes in. It’s known as the Proper Good Spicy Seasoning mix which Jaffry said: “gives my [his] chilli an extra kick”.

The blend is cheap to buy but is hard to find in the UK, however, any other seasoning products with a base of spicy red pepper and paprika should work just as well.

Once poured into the bowl, add half of it to the pan and fry it off to coat the ingredients.

Drain some of the juices from the beef in the pan using a spoon, if necessary, then add in the remainder of the spice mixture.

Add a drizzle of Worcestershire sauce and stir everything together before pouring in a whole can of chopped tomatoes. Follow this with four tablespoons of tomato puree and combine using a spatula.

Dissolve the stock cube in three cups of water and add slowly to the pan, followed by a tin of kidney beans. Leave this to boil down for between 30 minutes and one hour to allow the chilli to thicken and be sure to taste it to test whether more seasoning is required.

When the flavours are right, serve hot either on its own or with a side of rice.
