Chicken Chow Mein Salad
Combine spinach, oranges, chicken, red cabbage, celery, cucumber, cranberries, pecans, and leeks together in a bowl.
If you don’t keep cooked chicken around, just cook the chicken while you are preparing the rest of the salad and the prep time should be the same.
Substitute cooked, seasoned tofu for the chicken and you have a great vegetarian dish.
Green onion can be substituted for the leeks, if desired.
