Ingredients

  1. 4 medium eggplants
  2. 6 large red bell peppers
  3. 2 big onions
  4. 2 cups puréed tomatoes
  5. 1/2 cup vegetable oil
  6. 4 bay leaves
  7. 2 teaspoons honey
  8. 2 tablespoons salt
  9. 20 black peppercorns

Steps

  1. Grill or roast (390F for 20-30 min) bell peppers and eggplant until very soft.

  2. Cool cover with coarse salt. Then peel.

  3. Chop and cook onions. Add rest of veggies and 1 1/2 cup water. Simmer for 1 1/2hrs.

  4. Blend with hand mixer. And can.
