Ingredients
- 4 medium eggplants
- 6 large red bell peppers
- 2 big onions
- 2 cups puréed tomatoes
- 1/2 cup vegetable oil
- 4 bay leaves
- 2 teaspoons honey
- 2 tablespoons salt
- 20 black peppercorns
Steps
Grill or roast (390F for 20-30 min) bell peppers and eggplant until very soft.
Cool cover with coarse salt. Then peel.
Chop and cook onions. Add rest of veggies and 1 1/2 cup water. Simmer for 1 1/2hrs.
Blend with hand mixer. And can.
