Vegetarian Quesadillas

So good ? I used 3 tortillas because it’s just mewho’s eating this and it’s all the tortillas I had at the time anyways , trying to use them before they go bad . I cooked it two different ways , just for fun… this did fill me up . Think I used half a can of corn and half can of black beans. The Recipe easy to change to make at lot or just for one person.

Ingredients

  1. 2 Flour Tortillas
  2. 1/2 Cup Black Beans Rinsed and Drained
  3. 1/4 Cup Corn Rinsed and Drained
  4. 1 Mini Red Pepper
  5. 1 Mini Orange Pepper
  6. 1 Tbsp Homemade Taco Seasoning Or Store Bought Mix
  7. 1 Cup Cheddar or Pepper Jack Cheese
  8. 1 Tbsp Butter For Pan Frying
  9. 2 tablespoons salsa
  10. Topping / sides
  11. Your Favorite Salsa, Sour Cream,Avocado

Steps

  1. Dice peppers removing the ribs and seeds. Add diced peppers to a pan and cook until tender, about 5-7 minutes. Then add black beans, corn and taco seasoning, Salsa and stir to combine cooking another 3 minutes. Pour into a bowl and set aside.

  2. Melt butter on griddle pan or frying pan. Add cheese to the Tortilla. Add about 1/4 cup of the veggie/bean filling over the top of the cheese. sprinkle a generous amount of cheese over top Again Place tortilla down on the warm pan and cook over medium heat until tortilla is browned and cheese is melted. Carefully fold tortilla in half on to itself using the spatula. Repeat until all tortillas are filled and cooked. Slice and serve warm with suggested toppings and enjoy!
