Vegetarian Enchiladas

These cheesy enchiladas make for a simple weeknight meal with very little preparation needed.They are quick and use very few ingredients and go great with a side salad or other vegetable.


  1. 1 package corn tortillas
  2. 2 cups cheddar cheese
  3. Enchilada Sauce
  4. 2 cups water
  5. 2 tbsp chili powder
  6. 3 oz tomato paste
  7. 1 tsp cumin
  8. 1 tbsp olive oil
  9. 1/4 tsp cayenne pepper
  10. 1 dash tabasco
  11. 1/2 tsp onion powder
  12. 2 tbsp corn starch


  1. Heat olive oil in skillet on low medium heat

  2. Add chili powder followed by corn starch to make paste

  3. Add other spices

  4. Add water and bring to simmer

  5. Add tomato paste and stir

  6. Allow to thicken and turn off heat

  7. Pour small layer of sauce in baking dish

  8. Fill tortillas with spoonful of sauce and cheese and roll up. Place in baking dish and cover with remaining sauce.

  9. Bake on 350 degrees until bubbly
