Tunisian Chickpea Stew with Carrot & Tops, Turmeric and Harissa
Ingredients
- Olive oil
- 1 onion
- 3 carrots
- 3 tsp garlic
- 1 tbs thyme
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp fennel
- 2 tbs tomato paste
- 2 tomatoes diced
- 1 cup white wine
- 4 cupes vegetable broth
- Salt
- 1 can chickpeas
- Baby spinach
- Harissa paste
Steps
Heat oil in pot. Add onion, carrot, garlic and season with salt and pepper. Cook for 5 minutes. Add cumin, coriander, paprika, turmeric, fennel, and tomato paste and coom for 2 minutes. Add tomatoes and wine. Bring to a boil. Add broth. Add chickpeas, spinach, carrot tops. Simmer for 15 minutes
Add salt. Add tbs harissa paste. Serve with crusty bread.
