Tunisian Chickpea Stew with Carrot & Tops, Turmeric and Harissa

Ingredients

  1. Olive oil
  2. 1 onion
  3. 3 carrots
  4. 3 tsp garlic
  5. 1 tbs thyme
  6. 1 tsp cumin
  7. 1 tsp coriander
  8. 1 tsp paprika
  9. 1 tsp turmeric
  10. 1 tsp fennel
  11. 2 tbs tomato paste
  12. 2 tomatoes diced
  13. 1 cup white wine
  14. 4 cupes vegetable broth
  15. Salt
  16. 1 can chickpeas
  17. Baby spinach
  18. Harissa paste

Steps

  1. Heat oil in pot. Add onion, carrot, garlic and season with salt and pepper. Cook for 5 minutes. Add cumin, coriander, paprika, turmeric, fennel, and tomato paste and coom for 2 minutes. Add tomatoes and wine. Bring to a boil. Add broth. Add chickpeas, spinach, carrot tops. Simmer for 15 minutes

  2. Add salt. Add tbs harissa paste. Serve with crusty bread.
