The Most Popular Green Pepper Beef in China

Adding starch to seal the moisture into the meat is key!


  1. 2 Green Bell Peppers
  2. 1 lb beef, cut into bite sized chunks (skirt steak pictured)
  3. Marinade
  4. 1 tbsp Fresh ginger, minced
  5. to taste Black pepper
  6. 1 tsp Sugar
  7. 2 tbsp soy sauce
  8. After marinade
  9. Potato starch
  10. Vegetable Oil
  11. While stir frying
  12. Sugar
  13. Vegetable oil
  14. Salt


  1. Tear apart green peppers, removing cores and seeds.

  2. Cut beef and place in small mixing bowl

  3. Mix beef with marinade ingredients, wait for 20 minutes

  4. Add 2 tbsp potato starch and stir. If some meat is uncoated, add more starch and stir. Repeat until fully coated.

  5. Add 2 tbsp vegetable oil and stir.

  6. Heat large pan to medium high, cover bottom with oil and add meat

  7. Add bell peppers, 1/2 tsp sugar, 1/4 tsp salt. Taste and add additional salt/sugar/black pepper as desired.
