Taco Zucchini Boats

Ingredients

  1. 2 Tbsp butter or olive oil
  2. 1 bell pepper finely chopped
  3. 1 sweet onion finely chopped
  4. 1/2 tsp salt
  5. 1/4 tsp pepper
  6. 1 lbs ground beef
  7. 4-5 zucchinis ends cutnoff, cut half lengthwise, insides scooped
  8. 2 c shredded cheddar or whatever cheese you like
  9. seasoning ingredients
  10. 1 Tbsp cumin
  11. 1/2 tsp paprika
  12. 1/2 tsp garlic powder
  13. 1/2 tsp chili powder
  14. 1/2 tsp salt
  15. 1/4 tsp pepper
  16. 1/4 tsp cayenne pepper

Steps

  1. Preheat oven to 400°

  2. Saute bell pepper, onion, 1/2 tsp salt and 1/4 tsp pepper in butter or olive oil for 3-5 minutes over medium heat in a large pan

  3. Combine seasoning ingredients in a small bowl

  4. Add ground meat and continue cooking for an additional 7 -10 minutes

  5. When meat is almost done cooking, drain liquid from pan and add seasoning ingredients or taco packet..whichever you choose. Continue cooking until meat is completely cooked through.

  6. Turn off heat and mix in 1 1/2 cup cheese.

  7. Line a rimmed baking sheet with aluminum foil and place zucchini boats in it (cut side up)

  8. Drizzle a bit of olive oil and sprinkle salt on the inside of each boat for seasoning.

  9. Scoop even amounts of meat mixture into each boat.

  10. Cover boats with sheet of aluminum foil and bake for 15 mins.

  11. Remove foil and continue cooking an additional 10 -15 mins or until zucchinis are completely cooked.

  12. Top each boat with about a a tablespoon of cheese and return to oven for 1-2 more minutes to melt cheese.

  13. Serve with whatever toppings you like such as tomatoes, green onion, sour cream, etc.
