Sweet as honey chicken
- 4 cloves garlic
- 1 lime
- 1 thumb of ginger
- 1 cup jasmine rice
- 4 chicken breast
- 10 tsp white wine vinegar
- Chicken stock concentrate
- 4 Tbsp honey
- 2 Tbsp soy sauce
Bring 1 1/2 cups water to a boil with a pinch of salt.
Mince garlic. Quarter lime. Peak & mince ginger.
Once water boils add rice. Cover and lower heat to a gentle simmer. Cook 15 min.
Season chicken with salt & pepper. Heat oil in a pan over med heat. Cook chicken. 4-5 min per side. Remove from pan and set aside.
Heat oil in same pan. Heat over medium heat. Add garlic & ginger. Cook until softened and fragrant about a min. Add vinegar and let reduce until almost evaporated.
Stir in concentrate, honey and soy sauce. Let simmer 2-3 min. Return chicken to pan to coat.
Serve with lime wedge.
