Summer Rice Salad

Ingredients

  1. 200 g white rice
  2. 70 g canned tuna
  3. 4 tbs corn
  4. 1 cucumber
  5. 2 tomatoes
  6. 2 boiled eggs
  7. 2 tbs oil
  8. 500 ml hot water

Steps

  1. Heat the oil+rice in a pressure cooker for 2 minutes then add the hot water + a pinch of salt. Close the pressure cooker & let cook for 20 minutes on low heat

  2. Cut the tomatoes, the cucumber & 1 boiled egg into small cubes

  3. Drain the cooked rice mix it with the tuna, corn and the rest of ingredients. Put in the fridge & serve fresh. Might add some mayonnaise for a better taste. Enjoy!
