Strawberry banana bread
- 1/2 cup (1 stick) butter, softened
- 1 cup granulated sugar
- 2 large eggs, beaten
- 3 ripe bananas, mashed
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups fresh strawberries, chopped and tossed in 1 tbs flour
Preheat the oven to 375 degrees. Spray two loaf pans with nonstick spray and set aside.
In a large bowl, cream together butter and sugar until light and fluffy.
In a small bowl, beat eggs. Add eggs to sugar mix and beat until combined. Add bananas and mix until combined.
Sift all dry ingredients. Slowly add dry ingredients to banana mixture and mix until flour is is combined. DO NOT OVERMIX! Fold in flour covered strawberries.
Pour batter into prepared loaf pans and bake at 375 degrees for 15 minutes. Reduce heat to 350 degrees and bake for an additional 30 minutes or until edges are slightly brown or toothpick comes out clean. Let cool completely before removing from loaf pans.
