Steak & Guinness stew
With a little luck of the Irish
Ingredients
- 2 1/2 lbs sirloin steak (1in cubes)
- 4-5 slices bacon (chopped)
- 2 med. Onions (small dice)
- 4-5 large carrots (large dice, peeled)
- 4 stalks celery (large dice)
- 4 large garlic cloves (fine dice)
- 14 oz Guinness stout
- 2 tbs sugar
- 2 bay leaves
- 2 cups chicken broth
- 1/4 cup tomato paste
- 2 tbs flour
- Salt&pepper
Steps
Brown bacon in skillet. Leaving fat in pan, just add bacon to soup pot.
Brown steak cubes that have been well seasoned with salt & pepper to the skillet and bacon fat. Brown in batches. Leaving juices and fat in skillet, just add steak to soup pot. Toss in flour.
On med heat add onions and garlic to pan. Saute til don’t and lightly browned. Then add to the soup pot.
Meanwhile add bay leaves, sugar, and tomato paste to the soup pot.
Last saute carrots and celery til fragrant. Add to soup pot.
Add Stout and broth to pot. Replace skillet with soup pot on stove. Bring to boil. Summer 1-2 hours til steak is tender.
