Spicy Pineapple Margarita

A little sweet, a touch of tang, and a bit of heat is the formula that makes this bright and refreshing pineapple margarita so incredibly good. Go ahead and bust out a batch of these tropical cocktails for your next at-home happy hour—you deserve it.
Ingredients
- 12 fluid ounces pineapple juice
- 3 tablespoons granulated sugar
- 1jalapeño chile, cut in half lengthwise
- 1/4 cup fresh lime juice (from 2 limes)
- 4 teaspoons tajin seasoning
- 4lime wedges
- Ice
- 3/4 cup (6 oz.) tequila
- Jalapeño slices and pineapple wedges, for garnish (optional)
How to Make It
Step 1
Bring pineapple juice, sugar, and jalapeño to a boil in a small saucepan over medium-high. Reduce heat to medium-low, and simmer 3 minutes. Strain solids from juice; discard solids. Let cool completely in refrigerator, about 1 hour. Stir in lime juice.
Step 2
Place tajin seasoning in a shallow dish. Run a lime wedge around the rim of 4 glasses; dip rim of each glass in tajin seasoning to coat. Fill each glass with ice. Divide tequila among each glass; top with some of the pineapple mixture. Pour margarita back and forth between 2 glasses to mix well. Pour margarita back in serving glass, and add more ice if necessary. Garnish with jalapeño slices and pineapple wedge, if desired.
