Spicy Cucumbers

All thanks to Ms. Maangchi 🙂 This is not my recipe. also known as “oi-muchim”.

Ingredients

  1. 3 Kirby cucumbers
  2. 2 garlic cloves; minced
  3. 1 green onion; chopped
  4. 1/4 c thinly sliced onion
  5. 2 tbsp soy sauce
  6. 2 tsp Korean hot pepper flakes (gochugaru)
  7. 1 tsp sugar
  8. 2 tsp sesame oil
  9. 2 tsp toasted sesame seeds

Steps

  1. Cut the cucumbers, hotdog style.

  2. Then cut diagonally into 1/4” slices (or however you prefer). Place in a bowl.

  3. Add the onions and garlic.

  4. Switch to a bigger bowl. Add everything else and mix! I like it served cold 🙂 Enjoy!
