    DIRECTIONS

  • Preheat the oven to 375 degrees and spray the 6 cup muffin tin.
  • Ground the rolled oats in a food processor or blender until you have made oat flour.
  • Dice your celery, carrots, and green onions.
  • In a large bowl, combine the ground turkey, egg, vegetables, parmesan, cumin, and salt & pepper to taste.
  • Equally separate the meatloaf mixture into the muffin tins.
  • In a small bow, combine the tomato paste, vinegar, worcestershire sauce, stevia, and salt.
  • Spread the tomato paste topping onto each mini meatloaf.
  • Bake the meatloaves for 40 minutes in the oven. Serve with a vegetable and/or mashed potatoes!
