Mapo Tofu

Ingredients

  1. 2 globes garlic minced
  2. 1 inch ginger minced
  3. 2 scallions sliced
  4. 14 oz soft tofu cubed
  5. 1 tablespoon canola oil
  6. 1/2 pound ground pork
  7. Ingredients for sauce
  8. 2 1/2 tablespoon tobanjan
  9. 2 tablespoons mirin
  10. 1 tablespoon miso
  11. 1 tablespoon oyster sauce
  12. 1/2 tablespoon soy sauce
  13. 1 teaspoon sesame oil
  14. 1 teaspoon corn starch
  15. 4 tablespoons water

Steps

  1. Combine all ingredients for sauce

  2. Heat oil on medium high heat and add garlic and ginger. Cook until fragrant

  3. Add ground pork and cook until no pink meat remains. Add sauce and stir thoroughly

  4. When sauce is boiling, add tofu and stir to coat. Add green onion and remove from pan

  5. Best served over short grain Japanese rice
