Loaded Breakfast Fries
- French Fries (I like Crispy Straight Cut by Cavendish Farms)
- Bacon (I like naturally smoked)
- Cheddar Cheese (Old or sharp is my favourite)
- Salt & pepper
- Sour Cream
- Scallion (green onion)
Prepare french fries according to package directions. I like mine extra crispy so I fry them in small batches on the stove in vegetable oil on medium heat.
Dice the bacon and fry it up on medium to high heat. I don’t add any butter or oil. Bacon is fatty already and won’t stick.
Poach an egg. Boil water then reduce to low heat. Add 1 tbsp of white vinegar. Stir the water and gentle drop in your egg). Once cooked remove from the water and dry on paper towel.
Assemble. Add fries to a plate. Top with bacon, shredded cheese, and green onion. Place your egg on top and season with salt and pepper. Drizzle with sriracha and serve with sour cream on the side.
