Loaded Breakfast Fries


  1. French Fries (I like Crispy Straight Cut by Cavendish Farms)
  2. Bacon (I like naturally smoked)
  3. Cheddar Cheese (Old or sharp is my favourite)
  4. Egg
  5. Salt & pepper
  6. Sriracha
  7. Sour Cream
  8. Scallion (green onion)


  1. Prepare french fries according to package directions. I like mine extra crispy so I fry them in small batches on the stove in vegetable oil on medium heat.

  2. Dice the bacon and fry it up on medium to high heat. I don’t add any butter or oil. Bacon is fatty already and won’t stick.

  3. Poach an egg. Boil water then reduce to low heat. Add 1 tbsp of white vinegar. Stir the water and gentle drop in your egg). Once cooked remove from the water and dry on paper towel.

  4. Assemble. Add fries to a plate. Top with bacon, shredded cheese, and green onion. Place your egg on top and season with salt and pepper. Drizzle with sriracha and serve with sour cream on the side.
