Italian Beef & Lentil Slow Cooker Stew
Based on a Weight Watchers recipe
- 1 onion, chopped
- 1 medium garlic clove, minced
- 1 large zucchini, diced
- 1/4 c. whole wheat flour
- 1 tsp Italian seasoning
- 1 pound beef stew meat
- 1 can diced tomatoes, undrained
- 1 Tbsp tomato paste
- 3/4 c. dry lentils
- 4 c. canned beef broth
- 1 tsp kosher salt
- 1/4 tsp fresh ground black pepper
- 1/4 c. fresh basil, slivered
Toss beef, flour, salt and Italian seasoning in a bag and toss until the beef is well-coated. Brown in a cast iron skillet.
Place beef, along with the rest of the ingredients (NOT the fresh basil) in the crock pot, stir well. Cook on low for 6-7 hours.
Stir in basil, recover, and cook on low for an additional 5 minutes.
