Italian Beef & Lentil Slow Cooker Stew

Based on a Weight Watchers recipe

Ingredients

  1. 1 onion, chopped
  2. 1 medium garlic clove, minced
  3. 1 large zucchini, diced
  4. 1/4 c. whole wheat flour
  5. 1 tsp Italian seasoning
  6. 1 pound beef stew meat
  7. 1 can diced tomatoes, undrained
  8. 1 Tbsp tomato paste
  9. 3/4 c. dry lentils
  10. 4 c. canned beef broth
  11. 1 tsp kosher salt
  12. 1/4 tsp fresh ground black pepper
  13. 1/4 c. fresh basil, slivered

Steps

  1. Toss beef, flour, salt and Italian seasoning in a bag and toss until the beef is well-coated. Brown in a cast iron skillet.

  2. Place beef, along with the rest of the ingredients (NOT the fresh basil) in the crock pot, stir well. Cook on low for 6-7 hours.

  3. Stir in basil, recover, and cook on low for an additional 5 minutes.
