Ingredients

  1. 4 chicken thighs (boneless) or 2 chicken breasts (skinless)
  2. 6 cups chicken broth
  3. 1 bay leaf
  4. 2 carrots (diced)
  5. 1 yellow onion (diced)
  6. 2 celery ribs (diced)
  7. 1 tsp garlic powder
  8. 1 tsp thyme (dried)
  9. 1 tbsp parsley (dried)
  10. 1 tbsp lemon zest
  11. 1/4 cup lemon juice
  12. 1 tsp salt
  13. 1 cup orzo
  14. Parmesan Cheese (optional)

Steps

  1. Turn Instant Pot to saute setting, add in chicken and broth

  2. Chop and dice carrots, onions, and celery. Add into pot along with garlic powder, thyme, parsley, lemon zest, lemon juice, and salt.

  3. Cancel saute. Set valve to seal. Set manual/pressure cook to 8 minutes on High pressure.

  4. Move valve to venting. Wait 3 minutes. Remove lid and stir in orzo. Turn to saute setting to cook orzo.

  5. Remove chicken and shred into pieces. Salt and pepper to taste.

  6. Top with Parmesan cheese.
