Easy Thai chicken and vegetable curry
Because my mom is keto, this curry is perfect for her! #healthyliving
Ingredients
- 1 cup chopped leeks
- 1/2 cup sliced carrots
- 1/4 cup chopped cauliflower
- 1/2 cup vegetable broth
- 1/2 cup chicken (raw)
- 1 spoon curry paste
Steps
In a pot, add vegetable broth
Once vegetable broth is hot, add veggies and chicken
Add curry paste
Stir until the chicken is tender and veggies are soft
