Easy Thai chicken and vegetable curry

Because my mom is keto, this curry is perfect for her! #healthyliving

Ingredients

  1. 1 cup chopped leeks
  2. 1/2 cup sliced carrots
  3. 1/4 cup chopped cauliflower
  4. 1/2 cup vegetable broth
  5. 1/2 cup chicken (raw)
  6. 1 spoon curry paste

Steps

  1. In a pot, add vegetable broth

  2. Once vegetable broth is hot, add veggies and chicken

  3. Add curry paste

  4. Stir until the chicken is tender and veggies are soft

  5. Enjoy!
