Cinnamon Roll Cookies

  1. Pie crust
  2. 1 1/2 cup AP flour
  3. 1/4 tsp baking powder
  4. 1/3 cup butter
  5. 2 tbsp white sugar
  6. 1/2 tsp salt
  7. 1 tsp vanilla bean extract
  8. 4 tbsp + 1/4 tsp whole milk (low-fat works as well.)
  9. Filling
  10. 1/4 cup butter
  11. 4 tbsp light brown sugar
  12. 1 tsp cinnamon
  13. Glaze:
  14. 1 cup powdered sugar
  15. 1 1/2 tbsp whole milk (low-fat works as well)
  16. 1/2 tbsp cream cheese


  1. Preheat the oven to 180 degrees Celsius. (350 degrees Fahrenheit)

  2. Next, let’s make the pie crust! First, combine all the dry ingredients in a medium-size bowl and whisk together.

  3. Then, add in the 1/3 cup of butter and combine with your fingers until crumbly.

  4. In a small separate bowl, mix the milk and vanilla bean extract together.

  5. Slowly pour the milk mixture into the bowl of dry ingredients. Use your hands to form a ball of dough.

  6. Roll out your dough. Once the crust is rolled out, use either a ruler or a rolling pin (which is what I use) to cut off the edges making a rectangular shape.

  7. In a small bowl combine the butter, brown sugar and cinnamon together with a fork. Once combined well, spread evenly on the pie dough. Then, roll up.

  8. With a sharp knife, cut each slice about 1 inch thick.

  9. Place on a cooking tray that’s been lined with parchment paper. Bake for 15 minutes.

  10. While that’s baking, let’s move on to making the glaze! In a medium-sized bowl combine powdered sugar, milk, and cream cheese together; mix with a fork.
