Churro Cupcakes

Ingredients

  1. Cupcakes
  2. 1 1/2 cups flour
  3. 1 1/2 tsp cinnamon
  4. 1 1/2 tsp baking powder
  5. 1/2 tsp salt
  6. 1 cup sugar
  7. 1/2 cup butter
  8. 2 eggs
  9. 2 tsp vanilla
  10. 1/4 cup vegetable oil
  11. 1/2 cup milk
  12. Frosting
  13. 4 oz. cream cheese
  14. 4 tbsp butter
  15. 2 cups powdered sugar
  16. 1 tsp vanilla
  17. 1 tsp cinnamon
  18. 1 tbsp half and half
  19. 1/4 cup dulce de leche or caramel sauce

Steps

  1. Preheat oven to 350 degrees. Take butter spray and spray cupcake tins or use cupcake liners. In a mixing bowl, mix together all cupcake dry ingredients first. In a small bowl, whisk eggs together until fully whisked. Gradually add all wet ingredients including fully whisked eggs to dry ingredients until fully mixed.

  2. Pour batter halfway into each cupcake lining of tin and bake 18 to 20 minutes or until fork/toothpick comes out clean of batter.

  3. For frosting; mix together all ingredients except dulce de leche/caramel sauce.

  4. Once cupcakes are done baking, let completely cool. Once cupcakes are done cooling, decorate with frosting and drizzle dulce de leche/caramel sauce on top and serve.
