Chicken Minestrone Soup
Ingredients
- Step one
- 4 tablespoons oil
- 1/2 each chopped onion
- 6 cloves garlic, minced
- 2 stalks chopped celery
- 1 each chopped carrots
- Step two
- 1/2 dry pint Cherry tomatoes-diced or 1 -14. 5 ounce can of diced
- 1/2 habanero pepper finely chopped (optional… we like it spicy:)
- 1/4 red bell pepper-small dice
- 1/4 yellow bell pepper small dice
- 4 ounces diced cooked chicken
- 2 tablespoon tomato paste
- 1 each potato -small diced
- 2 quarts chicken broth (stock)
- 2 tablespoons parsley
- 1 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Pinch thyme
- 1/4 teaspoon oregano
- 1/2 teaspoon dry basil
- Step three
- 1 cup elbow macaroni
- 1 can (14 ouces +/-) white kidney beans
- 1 cup broccoli florets
- 1/2 cup small cauliflower florets
- 3-4 asparagus stalks cut thinly on a bias
- 1 scallion cut on a bias –added as 2 minutes before the soup is done
Steps
In a large pot over medium heat. Add onion, celery, garlic and carrots; sauté for 4 minutes.
Add tomatoes, peppers, diced chicken, tomato paste, potato, chicken broth, parsley, salt, pepper, thyme, oregano and basil to the pot. Bring to a boil, cover, and reduce heat. Simmer for approximately 15 minutes until vegetables are barely tender.
Add the macaroni,white kidney beans broccoli, cauliflower and asparagus and simmer for 15 minutes more. Adjust as needed seasoning.
Add the scallions 2 minutes before the soup is done.
