Chicken Minestrone Soup

Ingredients

  1. Step one
  2. 4 tablespoons oil
  3. 1/2 each chopped onion
  4. 6 cloves garlic, minced
  5. 2 stalks chopped celery
  6. 1 each chopped carrots
  7. Step two
  8. 1/2 dry pint Cherry tomatoes-diced or 1 -14. 5 ounce can of diced
  9. 1/2 habanero pepper finely chopped (optional… we like it spicy:)
  10. 1/4 red bell pepper-small dice
  11. 1/4 yellow bell pepper small dice
  12. 4 ounces diced cooked chicken
  13. 2 tablespoon tomato paste
  14. 1 each potato -small diced
  15. 2 quarts chicken broth (stock)
  16. 2 tablespoons parsley
  17. 1 1/2 teaspoon salt
  18. 1/2 teaspoon black pepper
  19. Pinch thyme
  20. 1/4 teaspoon oregano
  21. 1/2 teaspoon dry basil
  22. Step three
  23. 1 cup elbow macaroni
  24. 1 can (14 ouces +/-) white kidney beans
  25. 1 cup broccoli florets
  26. 1/2 cup small cauliflower florets
  27. 3-4 asparagus stalks cut thinly on a bias
  28. 1 scallion cut on a bias –added as 2 minutes before the soup is done

Steps

  1. In a large pot over medium heat. Add onion, celery, garlic and carrots; sauté for 4 minutes.

  2. Add tomatoes, peppers, diced chicken, tomato paste, potato, chicken broth, parsley, salt, pepper, thyme, oregano and basil to the pot. Bring to a boil, cover, and reduce heat. Simmer for approximately 15 minutes until vegetables are barely tender.

  3. Add the macaroni,white kidney beans broccoli, cauliflower and asparagus and simmer for 15 minutes more. Adjust as needed seasoning.

  4. Add the scallions 2 minutes before the soup is done.
