Broiled Supreme Chicken

Ingredients

  1. 4 Chicken Breast
  2. 4 sprigs Rosemary
  3. 8 sprigs Chervil
  4. to taste Salt
  5. Crushed Black Pepper
  6. 1/2 cup Mushrooms
  7. 2 tsp Italian Parsley, chopped
  8. 2 TB Port Wine Reduction
  9. 2 TB Red Onion, chopped
  10. 2 Potatoes
  11. 6 oz Butter
  12. 4 sprigs Rosemary
  13. Port Wine Reduction:
  14. Port Wine
  15. Reduced Beef Bouillon
  16. 5 Blackberries

Steps

  1. Immerse chicken in rosemary and garlic infused olive oil for two hours.

  2. Heat pan and add butter. Cook chicken on medium heat, turning on both sides until crisp and golden brown. Finish in oven prior to serving.

  3. Heat skillet, add butter and fork mashed potatoes. Cook until golden and crisp.

  4. Add chopped onion and season. Remove from pan.

  5. Saute chopped mushrooms and place on potatoes.

  6. Reduce port wine, add bouillon, blackberry puree, season and strain.

  7. Remove chicken from oven. Place over mushrooms.

  8. Pour foaming garlic and parsley butter over chicken.

  9. Garnish with chervil.
