Ingredients

  1. 1 pound thinly sliced pork
  2. 3 tablespoons soy sauce
  3. 3 tablespoons brown sugar
  4. 2 tablespoons fish sauce
  5. 1 tablespoon finely minced lemongrass
  6. 1 teaspoon grated garlic
  7. 4 cloves pressed garlic (using a garlic press)
  8. Pinch black pepper
  9. 1/2 cup mayonnaise
  10. 1 teaspoon sriracha
  11. 1 tablespoon vegetable oil
  12. 4 medium French rolls
  13. 2 sliced cucumbers
  14. Cilantro
  15. Pickled Vegetables
  16. 4 ounces shredded carrots
  17. 1 bunch radishes (sliced or shredded)
  18. 1 cup rice vinegar
  19. 1/2 cup water
  20. 3 tablespoons sugar
  21. 1 tablespoon salt

Steps

  1. To make the pickled vegetables, place your carrots and radishes into a large bowl or container

  2. In a cup or other small container, combine your vinegar, water, sugar, and salt. Whisk to dissolve

  3. Pour liquid over vegetables and marinate for 1 hour at minimum and 1 day at maximum

  4. Place your pork slices in either a large bowl or large ziplock bag. Add all of the ingredients up to and including the black pepper. Toss to coat and set out to marinate for 1 hour at minimum and 1 day at maximum

  5. When both containers are ready to prepare, using a small bowl, mix together your mayonnaise and sriracha. Set aside

  6. Place a grill pan (a cast-iron skillet would work too) on high heat. After your pan becomes hot, pour 2 teaspoons of oil onto the pan

  7. Working in batches, add in some pork in an even layer. Allow the pork to sear on the first side for 1 minute, then flip to the other side. Remove and repeat with your remaining pork

  8. To make the sandwich, cut the French rolls in half lengthwise and spread some mayonnaise on both sides of the bread. Sprinkle a few drops of soy sauce over the mayonnaise. Next, add a layer of pork, some vegetables, some cucumber slices, and some cilantro

  9. Enjoy!
