Avocado and egg toast

I absolutely HATED avocado but since I was trying to get healthier and needed to up my intake of healthy fats I needed something to help me with the texture. So I found this little gem. It is so flavorful and soooooo amazing. Simple yet my favorite. I now love avocado ?❤️ this is a recipe I found on Pinterest I’m not sure who the author is by.


  1. 1/2 avocado mashed
  2. 1 slice toasted honey wheat bread
  3. 1 over easy egg
  4. 1/2 tbsp butter
  5. 2 slices tomatos
  6. Spinach(if desired)
  7. 1/2 tbsp Heb whipped salad dressing
  8. Seasonings(season to your liking I don’t measure and don’t use a lot)
  9. 1/4 tsp ground turmeric
  10. 1/4 tsp ground ginger
  11. 1/4 tsp ground cumin
  12. 1/4 tsp onion powder
  13. 1/4 tsp paprika
  14. 1/4 tsp garlic powder
  15. Pink Himalayan salt
  16. Black pepper


  1. Toast your bread

  2. Cook your egg with 1/2 tbsp butter,over easy is my favorite way. Add seasonings before egg cooks

  3. Put mayo on your toasted bread then spread the mashed avocado over that put the tomato on top and then add spinach(if desired) to that to keep from sliding off. Then add the egg and enjoy!
