Alkaline Shiro Wot served with Injera
Ingredients
- Ginger
- 3 tomatoes
- 1 onion
- 2 cups water
- Grapeseed oil
- Cooked Injera (without the yeast)
- 1 teaspoon Thyme
Steps
Heat the grapeseed oil in a pan and fry gimger and onions till browned
Add 1/2 cups of blended tomatoes cook for 3 mins add 1 teaspoon of thyme and water and bring to a boil. Add the Garbanzo flour in small batches while you keep stiring continuously. Make sure there are no lumps. you can always use a blender if you want to.
Mix in Cayenne Pepper and Himalayan salt.
Cook the shiro on low heat for 5 minutes. Stir frequentlyserve immediately with Amaranth(callaloo) and Injera
