BILLY’S EGG DROP SOUP FOR ONE

INGREDIENTS

  • 2cupschicken stock or 2 cupsvegetable stock
  • 1tablespooncornstarch
  • 34 teaspoonground ginger
  • 14 teaspoongarlic powder
  • 1egg
  • 1egg white
  • 14 teaspoontoasted sesame oil
  • 2green onions, thinly sliced
  • 14 cupwhole kernel corn

    DIRECTIONS

  • Whisk together stock, cornstarch, ground ginger and garlic powder in a medium saucepan until smooth. Heat over a high heat until it comes to a boil. Lower to a simmer.
  • Whisk together the whole egg and egg white in a measuring cup.
  • Make sure the stock is simmering NOT BOILING and use a fork to stir it in a circular motion.
  • Very slowly pour the whisked eggs into the stock as you continue stirring making long “egg ribbons”.
  • Remove the saucepan from the heat.
  • Carefully stir in the sesame oil, green onions and corn being careful not to break up the egg ribbons too much.
  • Season with salt and pepper to taste and some additional sesame oil and/or soy sauce if you like.
