Vegetable spaghetti Bolognese

    Ingredients

    400g pack Waitrose Lean Aberdeen Angus Beef Mince (Typically 5% Fat)
    1 onion, diced 
    1 carrot, finely diced 
    400g can chopped tomatoes
    1 beef stock cube
    185g pack Waitrose Spiralized Butternut Spaghetti
    185g pack Waitrose Spiralized Courgette Spaghetti
    1 tbsp chopped parsley

    Method

    1. Fry the mince, onion and carrot in a large saucepan until the mince is browned, then add the tomatoes. Blend the stock cube with 150ml boiling water and add to the pan. Bring to
    the boil, cover and simmer for 20 minutes, stirring from time to time.

    2. Meanwhile, microwave the vegetable spaghetti according to the pack instructions and mix together.

    3. Serve with the Bolognese, garnished with parsley.
