Quick chicken, leek & spelt casserole

    ½ tbsp olive oil
    330g pack essential Waitrose British Chicken Breast Chunks
    2 leeks, sliced
    1 red pepper, deseeded and sliced
    75g Waitrose Love Life Pearled Spelt
    300ml chicken stock


    1. Heat the oil in a large saucepan and fry the chicken for 5 minutes. Add the leeks, pepper and spelt and cook for 3 minutes.

    2. Stir in the stock, cover and simmer for 15-20 minutes until the chicken is cooked throughout, there is no pink meat and the juices run clear, and the spelt is tender.
