2 largerusset potatoes, sliced thin (skin on or off)
1 cuplime juice
1⁄2 cupgarlic juice
salt (to taste)
lard (for frying)
Directions
Combine lime and garlic juice in large bowl. Set aside.
Slice russet potatoes (skin on or off) razor thin. Add to lime and garlic marinade. Allow potatoes to marinate for 30 minutes to an hour.
Heat deep fryer to 375 degrees.
Add potatoes a few at a time. They will cook quickly.
Turn as you see browning around edges of potato chip. Flip chips and continue frying for a few seconds.
Remove potatoes from fryer. Pat dry with paper towels.
Place potatoes in a large bowl. Toss and salt to taste.
Remove potatoes from bowl. Store in airtight container or ziploc bags. Or serve immediately.
