  • 2 lbsshrimp, peeled, deveined and tail on
  • salt, pinch
  • pepper, freshly ground
  • 1 teaspoonolive oil
  • 1 smallonion, chopped
  • 2 tablespoonsgarlic, chopped
  • 12 cupwhite wine
  • 12 cupshrimp stock
  • 1 lemon, juice of
  • 2 tablespoons cold butter
  • Directions

  • Season shrimp w/ salt and pepper.
  • Heat a large saute pan over med-high heat.
  • When pan is hot, add olive oil to coat pan
  • Add shrimp and saute quickly until just starting to turn pink, put not cooked through.
  • Remove from and set aside.
  • Add onions and cook about 3 min, just until they begin to soften.
  • Add garlic and cook another 30 sec.
  • Add lemon juice, white wine and stock, then reduce by 2/3 for about 5 minute.
  • Add shrimp back to the pan and swirl in butter.
  • Finish w/ parley and check seasoning.
  • Garnish w/ lemon slices and serve over angel hair pasta.
