One Pot Ham and Potato Casserole

  • 3tablespoonsbutter
  • 14 cupdiced onion
  • 14 cup diced celery
  • 3tablespoonsflour
  • 1cupmilk (can add more if it thickens too much)
  • 2cupsshredded cheddar cheese
  • 12 cupsour cream
  • 1cupfrozen peas
  • 1cupfrozen corn
  • 1cup diced cooked potato
  • 2cups diced ham
  • 14 teaspoonpepper
  • 18 teaspooncayenne (or to taste)
  • 14 teaspoonsalt (or can omit since ham and cheese are salty)

  •  Melt butter in a large Dutch oven or oven safe heavy bottom pot.
  • Add onions and celery and sauté for 1-2 minutes until softened.
  • Whisk in flour and cook for 1-2 minutes.
  • Whisk in milk a little at a time and cook until just beginning to boil and sauce has thickened.
  • Remove from heat and add 1 and 1/2 cup of the cheese and stir until incorporated.
  • Stir in sour cream.
  • Add ham, potatoes, corn and peas.
  • Cover and place in 375 F (190 C) oven for 25 minutes.
  • Remove cover,  sprinkle remaining cheese on top and cook for additional 5 minutes.
