Add oil to a large pot and bring to medium high heat.
Add chicken working a batch at a time, 2 to 3 batches, you’re looking to brown the chicken, not cook it. Set each batch aside in a bowl as it completes.
Put onion, celery, and potato in the pot, reduce heat to medium, and cook vegetables until onions begin to turn translucent.
Add garlic and ginger, cook and stir for 2 minutes.
