Best Leftover Turkey or Chicken Casserole

  • 1cupcarrot, cut into thin coins
  • 1mediumonion, chopped
  • 12 cupcelery, diced
  • 2garlic cloves, minced

  • 2cupscooked turkey
  • 1tablespoonlemon juice
  • 1teaspoonWorcestershire sauce
  • 1 12 teaspoonstarragon
  • 1 12 cupsfrozen green peas

    DIRECTIONS

  • Brown onions, carrots, celery and garlic in oil until onions soften, about 5 minute.
  • Add rice and saute in the oil and veggie mixture until rice is golden.
  • Stir in broth, soup, salt and pepper. Cover pan and simmer 20-25 minutes till liquid is absorbed.
  • Add in turkey, lemon juice, tarragon and peas.
  • Pour mixture into 9×13 baking dish that has been sprayed with cooking spray.
  • Bake 25 minutes at 350 degrees until bubbly hot.
